I would go for i5 and upgrade GFX later because 560 is good enough to max games for now at least on that resolution.

So it's FX-8120+7850 vs.i5-3570K+GTX560.I would go for FX8120+7850 as 7850 is much better than 560 and it has more VRAM (2GB vs.1GB).8120 is still enough to max any game smoothly.

Pretty well, in some aspects FX-8120/8150 is close to i5.7850 and 560 can handle editing easily.

Yes, for encoding this is VERY NICE, but for gaming, you can get better performance for %150 less money. And Piledriver came out, and it looks like AMD fixed some problems in the areas Bulldozer was weak in.

OK, but isn't the GPU easier to upgrade than CPU? So if I get the 6870, and then buy the GTX 6 months down the line, won't that be better?

Either CPU or GPU aren't hard to upgrade. You mean to put 6870 now and and 6 months after to add GTX? To have them working together?

Yes it easier to upgrade the GPU but not realy as the cpu is just a lot more fragile. If I were you I will get this CPU and then keep the HD 6870 for a while and then later when the gtx 660 ti is a little cheaper then I will buy it :D But that is what i would do in the end it is your choice.

Congrats for your new rig :) You can max many games and for demanding ones you can run on ultra without AA. You will probably run upcoming games like Crysis 3 also with good settings but we need to wait at least till we have its official requirements to say something more accurate, but I would not worry much with those specs :)
