In terms of overall gaming performance, the graphical capabilities of the Nvidia GeForce GTX 780 Ti SLI are significantly better than the Nvidia GeForce GTX 590 EVGA Classified Hydro Copper Edition.

Mini ReviewGeForce GTX 590 EVGA Classified Hydro Copper is a special edition of the dual-graphics solution GeForce GTX 590.
This edition comes overclocked out of the box in the central unit that went from 608MHz to 630MHz and in the operating memory clock, which is now of 864MHz. Furthermore, it features a new cooling system which keeps the card cool under load.
Benchmarks indicate a 5% performance boost over the reference card and so it proves to be faster than GeForce GTX 680.
GeForce GTX 780 Ti SLI is a solution of two GeForce GTX 780 Ti put together using NVIDIA'S SLI technology.

SLI relies a lot on proper driver support and may suffer from micro-stuttering in lower frame rates (below 30). Benchmarks indicate the performance is overall, is up to 62% better than a single GeForce GTX 780 Ti performing by itself it might be worse (depending on whether or not the 3D game supports SLI or in the graphics driver) than a single GeForce GTX 780 Ti. Expect this combination to draw up to 500 Watt though the average power consumption should be slightly lower.
Even the most demanding games will run at the highest settings.
